Fresh Local Seafood
Hudson’s features an extensive seafood-oriented menu with an emphasis on using local and fresh shellfish. The menu includes over 30 entrée selections and it is a must visit on Hilton Head. Live entertainment on the dock nightly Sunday – Friday March through August.
Potato Salad
The fall white shrimp season typically produces the largest catch. These shrimp are the offspring of the spring spawn. This season usually begins in August and peaks in September and October. The season usually lasts through December and sometimes into January. They are great for shrimp boils, like our Lowcounrty Boil, and other preparations where they can soak in the flavors but we also prepare them fried, pan sautéed, steamed, broiled, and blackened.

This tradition started in the dining room aptly named The Oyster Factory, which is located in the rear of the restaurant. Hudson, Jr. added fresh locally caught shrimp to the operation, and in 1967, the operation grew to 95 seats. Hudson’s is the only restaurant on Hilton Head Island that has a working fleet of shrimp boats. Jeff and Skip Toomer are third generation shrimpers, and they dock at the restaurant to deliver the freshest locally caught shrimp. You might be lucky and see the process as you dine on the dock. Our local shrimp are sweet-tasting, succulent, and delicious.

When the crabs back out of their shells, they are immediately removed and served to hungry guests. Last year we shed out and served over 2,300 soft shell crabs. Each Spring, we have our own soft shell crab shedding operation at Hudson’s. Our shedding boxes are constructed in the packinghouse with a water circulating system to facilitate and manage the molting process.

The recipient of countless awards and recognition for excellence in quality and service, Hudson’s was most recently featured in Bon Appétit as a top pick for fried seafood. Originally built by the venerable J. B. Hudson, Sr. as an oyster factory in 1912, Hudson’s oysters were brought in by oar-powered boats known as Bateaux, shucked on the docks and then sent by barge to the Northeast. The discarded shells were dispersed creating the very peninsula and foundation on which the restaurant currently stands. Hudson’s Seafood is literally a business built on oysters! Hudson, Sr. started a thriving family business that became a local landmark, a Hilton Head tradition and widely knows as the source of the freshest seafood on Hilton Head Island.
SHRIMP BURGER
We support local fishermen, shrimpers, and crabbers to provide the freshest local seafood to our guests and are committed to catch and purchase as much seafood as possible from our local waters. Over 3,000 gallons of oysters and 125,000 pounds of shrimp are consumed and over 450,000 raw oysters are freshly shucked on the premises. We farm and harvest our very own oysters, cultivate fresh soft shell crabs, harvest stone crab claws, and harvest fresh local white shrimp. Our family of chefs, fisherman, shrimpers, crabbers and restaurant staff welcome your family to have a great local experience at our waterfront location. In 1975, Brian and Gloria Carmines—transplants from Long Island, NY via Atlanta, GA—purchased Hudson’s, and a new family tradition began.
Shell Ring is a sustainable oyster farm in Port Royal Sound. If you are a fan of bivalves, you will, without a doubt, appreciate the fruits of our labor. These oysters are often harvested, shucked, and eaten in the same day—absolutely the freshest oysters anywhere in the world.
All of our fish are brought in whole, filleted in-house, and added to the daily lunch and dinner specials. There are two seasons for white shrimp. The first, is the roe shrimp season which usually occurs in May or June.
